How would I express "Thank you for offering to carry my bags the other day" in Japanese? I have a feeling that it will be something really simple, but nothing much is coming to mind. Here's a guess, though: この間、荷物を運ぶのを{動詞}してくれてありがとう ね。

I think この間、荷物を運びましょう(持ちましよう)と言って くれてありがとうごあじます。
is probably OK. The only worry would be if you put it too strangely it will come out like his offer of help was well intentioned but it was more of a hinderance and that is the reason it was refused....:relief:

I think Elizabeth san's expression is good:
この間は荷物を持ちましょうと言ってくれてありがとう (ございます)。
It is also possible to say
荷物を運ぶのを手伝おうと言ってくれてありがとう。
(I guess 運びよう is meant to be 運びましょう)

You're どうもing and すみませんing for the kindness/consideration shown, regardless of whether the act took place or not. In fact, it is common to say such things whether anything that we might think would even remotely warrant it took place or not; just grease on the social skids.
